The Family Recipe That Is Meaningful to Me

By: Jason Li

The family recipe that is meaningful to me is eggs fried with tomatoes.

This recipe is special to me because it was one of the first dishes I learned to make. It is really fast and really simple to prepare because you only need 2 tomatoes and 2 eggs. You cut the tomatoes in half and cut each of the halves into 4-6 pieces. This is also one of my favorite dishes because it is delicious.

You make it by first whisking some eggs until the yolks and whites are blended. Then, you turn on the stove and wait until the pan is hot. After the pan is hot, put in a light coat of oil and wait for the oil to heat up. When the oil is done heating, you dump your eggs in and wait for them to clump together. Next, you take the eggs out and put your tomatoes and press them down until they are almost flat. After that, you add water, depending on the amount of water you have in the tomatoes, and cover up the pot. After the tomatoes soften, you add the eggs and spit them into smaller pieces and stir them around. After about 1 minute, you can put the eggs and tomatoes onto a plate.
